The Oil Down is Grenada’s National Dish and it is delicious! In this week’s episode, we’re heading to our friend’s aunty’s house and she prepares this famous meal for us! We spend the day liming and helping with the preparation (and having a couple of beers).

An oil down is basically a huge pot, with layers of ingredients, boiled down for about an hour. In the end, it is a hearty stew full of protein and starchy goodness!

Typical Ingredients Include:

  • Chicken
  • Basil
  • Thyme
  • Celery Leaves
  • Lambi (conch meat)
  • Caribbean Seasoning Peppers
  • Onion
  • Garlic
  • Carrots
  • Callaloo
  • Salted or cured Pig Tail (for salt / broth)
  • Yams
  • Green Bananas
  • Bread Fruit
  • Dumplings
  • Tumeric
  • Coconut
  • Cabbage
  • Flour
  • Crab
